Raw honey is simply honey that has been lightly filtered without pasteurisation. This will ensure that it contains naturally occurring bee pollen, beeswax, and propolis.
When raw honey is first bottled it will be in a liquid form due to the extraction process. One thing that distinguishes raw honey from other honeys is that it will revert back to its solid form while in the bottle.
Pasteurisation heats the honey to the point that the bee pollen, beeswax, and propolis are destroyed. This leaves only the simply sugar backbone which is honey. Pasteurisation also destroys the vitamins, minerals, natural enzymes and antioxidants that makes Wedderspoon honey so special.
